A little bit about the place - it's in a house that was built in 1906 and is a part of the Virginia Historical Society. There is a white, built-in craftsman-style china cabinet in the kitchen and an original dark wood fireplace in the bedroom. I tend to like more earthy colors but am open to anything.

What do you think about remodeling a kitchen with stainless steel appliances, granite countertops, and modern cabinets when the rest of our house is decorated in a more traditional way? Will it look out of place or is it ok to mix styles?
Sure you can but I would caution on the use of overly modern cabinets,the stainless and granite are every bit traditional and would look great with a more traditional cabinet.
The reason is that you will want a seamless flow of styles from family room to dining room to kitchen particularly when it comes to resale
There is ways of incorporating traditional touches to modern kitchens you just have to be careful and creative. For example, the crown is traditional, then your doors should only have like 1/8" revile and no molding or router edges (modern look), then the bottom you might get creative and get your cabinet maker to make you a fancy traditional piece of wood going across the bottom edge of your upper wall cabinets.

The same for the base cabinets, 1/8" revile all around, plain doors and drawer fronts, with a traditional bottom piece going across. You might want maybe make it look like a piece of furniture by putting that traditional bottom piece and some legs. He is probably going to have to give it a bit of a higher toe kick so it could rely get that furniture piece look.

As for the wood, you will probably use a lot of plywood, and that price will vary. When major storms come through or construction picks up, the cost of wood typically goes up. You will probably use cheaper wood for the unseen parts and a nicer one for the visible areas. Probably about $20 to $50 a sheet depending on how nice the surface is. A good book on cabinet making should tell you how to calculate the materials. Don't forget tools. If you don't have any, that will be a big cost. Building cabinets without certain power tools is practically impossible for kitchen cabinets

Usually it is best to do the floor first and then the cabinets. Putting flooring up to the cabinets would mean you'll have a harder time removing appliances, like the dishwasher and fridge, if they ever need to be taken out and replaced. You'd have to lift the appliances over the lip of where the new flooring meets the appliance and that would be hard to do. It also is best to do flooring first because if you remodel in the future, you won't have to worry about patching in new flooring if you decide to change the configuration of the kitchen cabinets.
It would be easier to do the floors first. That way you don't have to cut around all the cabinets
